Certainly! Here’s a low-carb version of Chicken Divan:

Ingredients:

  • 2 lbs boneless, skinless chicken breasts, cooked and shredded
  • 1 lb fresh broccoli florets
  • 1 cup mayonnaise (use a low-carb or sugar-free option)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1/2 cup almond flour (for topping)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Steam the broccoli until it’s just tender. You can do this on the stovetop or in the microwave. Set aside.
  3. In a mixing bowl, combine mayonnaise, cheddar cheese, Parmesan cheese, heavy cream, minced garlic, Dijon mustard, salt, and pepper. Mix well.
  4. Place the shredded chicken in the bottom of a greased baking dish.
  5. Layer the steamed broccoli over the chicken.
  6. Pour the mayonnaise and cheese mixture evenly over the chicken and broccoli.
  7. In a separate bowl, mix the almond flour with a pinch of salt. Sprinkle this mixture over the top of the casserole.
  8. Bake in the preheated oven for about 25-30 minutes, or until the top is golden and bubbly.
  9. Allow the Chicken Divan to cool for a few minutes before serving.
