CABBAGE LASAGNA

Certainly! Cabbage lasagna is a delicious and low-carb alternative to traditional lasagna. Here’s a simple recipe for you:

Ingredients:

  • 1 head of cabbage
  • 1 pound ground beef or turkey
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (6 ounces) tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups ricotta cheese
  • 1 egg
  • 3 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Remove the outer leaves of the cabbage and blanch the whole head in boiling water for about 5 minutes. Carefully peel off the leaves and set them aside to cool.
  3. In a large skillet, brown the ground beef or turkey over medium heat. Add chopped onion and garlic and sauté until the onion is translucent.
  4. Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Let the sauce simmer for about 10-15 minutes.
  5. In a separate bowl, mix the ricotta cheese with the egg until well combined.
  6. In a baking dish, spread a thin layer of the meat sauce. Place a layer of cabbage leaves on top.
  7. Spread half of the ricotta mixture over the cabbage leaves, followed by a layer of shredded mozzarella cheese.
  8. Repeat the layers – meat sauce, cabbage leaves, ricotta mixture, and mozzarella.
  9. Finish with a layer of cabbage leaves on top. Sprinkle Parmesan cheese over the final layer.
  10. Cover the baking dish with foil and bake in the preheated oven for about 30-40 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
  11. Allow the cabbage lasagna to rest for a few minutes before slicing. Garnish with fresh parsley if desired.
