Dill pickle pasta salad is a delicious and refreshing dish that combines the flavors of pasta, dill pickles, and a tangy dressing. Here’s a simple recipe for you to try:

Ingredients:

  • 8 oz (about 2 cups) rotini or your favorite pasta
  • 1 cup diced dill pickles
  • 1/2 cup diced red onion
  • 1/2 cup diced celery
  • 1/2 cup diced bell pepper (any color)
  • 1/2 cup mayonnaise
  • 1/4 cup pickle juice
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to the package instructions. Drain and let it cool to room temperature.
  2. In a large bowl, combine the cooled pasta, diced dill pickles, red onion, celery, and bell pepper.
  3. In a separate bowl, whisk together the mayonnaise, pickle juice, Dijon mustard, and fresh dill. Season with salt and pepper to taste.
  4. Pour the dressing over the pasta and toss until everything is well coated.
  5. Refrigerate the salad for at least 1-2 hours to allow the flavors to meld.
  6. Before serving, give the pasta salad a good stir and adjust the seasoning if needed.
  7. Optional: Garnish with additional fresh dill or chopped pickles before serving.
