Cheese Shrimp Penne Pasta & Spinach

Sure, here’s a simple and delicious recipe for Cheese Shrimp Penne Pasta with Spinach:

Ingredients:

  • 8 oz penne pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and black pepper to taste
  • Crushed red pepper flakes (optional, for some heat)
  • Fresh basil or parsley for garnish

Instructions:

  1. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side until they turn pink and opaque. Season with salt and black pepper to taste.
  4. Add the halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they start to soften.
  5. Toss in the fresh spinach and stir until it wilts, approximately 1-2 minutes.
  6. Add the cooked penne pasta to the skillet and toss everything together until well combined.
  7. Sprinkle the grated Parmesan and shredded mozzarella cheeses over the pasta mixture. Stir until the cheese is melted and coats the pasta.
  8. If you like a bit of heat, you can add some crushed red pepper flakes to taste.
  9. Adjust the seasoning with salt and pepper if needed.
  10. Garnish with fresh basil or parsley.
