Birria Fried Chicken is a creative fusion dish that combines the flavors of birria, a traditional Mexican stew often made with goat or beef, with the crispy goodness of fried chicken. Here’s a simple recipe you can try:

Ingredients:

For the Birria Marinade:

  • 2 pounds chicken pieces (bone-in, skin-on)
  • 3 dried guajillo chilies, stemmed and seeded
  • 3 dried ancho chilies, stemmed and seeded
  • 1 medium onion, roughly chopped
  • 4 garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • 1 cup beef or chicken broth

For the Fried Chicken:

  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

For Serving:

  • Corn or flour tortillas
  • Chopped cilantro
  • Diced onions
  • Lime wedges

Instructions:

  1. Prepare the Birria Marinade:
    • In a dry skillet, toast the dried chilies over medium heat until fragrant, about 1-2 minutes per side.
    • In a blender, combine the toasted chilies, chopped onion, garlic, ground cumin, dried oregano, ground coriander, salt, pepper, and broth. Blend until you have a smooth marinade.
  2. Marinate the Chicken:
    • Place the chicken pieces in a bowl or zip-top bag and pour the birria marinade over them. Ensure each piece is well-coated. Marinate in the refrigerator for at least 2 hours, or overnight for best flavor.
  3. Coat the Chicken:
    • In a shallow dish, mix the flour, paprika, garlic powder, salt, and pepper. Dredge each marinated chicken piece in the seasoned flour mixture, shaking off any excess.
  4. Fry the Chicken:
    • Heat vegetable oil in a deep skillet or frying pan over medium-high heat.
    • Fry the chicken pieces until golden brown and cooked through, about 10-15 minutes, depending on the size of the pieces. Ensure the internal temperature reaches 165°F (74°C).
  5. Serve:
    • Serve the Birria Fried Chicken on warm tortillas.
    • Top with chopped cilantro, diced onions, and a squeeze of lime juice.
