Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 1 pound potato gnocchi
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup artichoke hearts, chopped
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh basil for garnish

Instructions:

  1. Cook the gnocchi according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the cherry tomatoes, sun-dried tomatoes, black olives, and artichoke hearts. Sauté for 2-3 minutes until the tomatoes start to soften.
  5. Pour in the chicken or vegetable broth and bring it to a simmer. Allow it to cook for a couple of minutes to let the flavors meld.
  6. Stir in the heavy cream, dried oregano, dried basil, salt, and pepper. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  7. Add the cooked shrimp and gnocchi to the skillet. Toss everything together gently until the shrimp and gnocchi are well-coated with the sauce.
  8. Serve the Tuscan Shrimp and Gnocchi hot, garnished with grated Parmesan cheese and fresh basil.
