Moist Pineapple Cake

Certainly! Here’s a simple recipe for a moist pineapple cake:

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained
  • 1/2 cup buttermilk

For the Pineapple Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons pineapple juice

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  6. Fold in the crushed pineapple.
  7. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. While the cake is baking, prepare the pineapple glaze. In a small bowl, whisk together the powdered sugar and pineapple juice until smooth.
  10. Once the cake is done baking, remove it from the oven and let it cool in the pan for 10 minutes. Then, drizzle the pineapple glaze over the warm cake.
  11. Allow the cake to cool completely before serving.
