Crockpot Chicken and Dumplings

Certainly! Crockpot Chicken and Dumplings is a comforting and delicious dish. Here’s a simple recipe:

Ingredients:

For the Chicken Stew:

  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 4 cups chicken broth
  • 2 cups sliced carrots
  • 1.5 cups sliced celery
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/2 cup frozen peas (optional)
  • 1/2 cup frozen corn (optional)
  • 1/3 cup all-purpose flour (for thickening)

For the Dumplings:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/3 cup chopped fresh parsley (optional, for garnish)

Instructions:

  1. In the crockpot, combine chicken, carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper.
  2. In a separate bowl, whisk together the flour and chicken broth until smooth. Pour the mixture into the crockpot, stirring to combine with the other ingredients.
  3. Cover and cook on low for 6-7 hours or until the chicken is cooked through and the vegetables are tender.
  4. About 30 minutes before serving, mix the dumpling ingredients in a bowl. In a separate bowl, mix together the flour, baking powder, salt, and milk until just combined.
  5. Drop spoonfuls of the dumpling batter onto the chicken mixture in the crockpot.
  6. Cover and cook on high for an additional 30 minutes, or until the dumplings are cooked through.
  7. About 10 minutes before serving, stir in the frozen peas and corn if using.
  8. Taste and adjust seasoning if necessary. Sprinkle with chopped fresh parsley before serving.
  9. Serve the chicken and dumplings in bowls, making sure to ladle some of the delicious stew and dumplings into each bowl.
