Posted on January 20, 2024

A white almond wedding cake is a classic and popular choice for weddings. It’s a delicious and elegant cake that typically features a moist white cake infused with almond flavor. The almond flavoring can come from almond extract or almond paste, giving the cake a distinctive and delightful taste.

Here’s a basic recipe for a white almond wedding cake:

Ingredients:

For the Cake:

  1. 2 3/4 cups all-purpose flour
  2. 2 1/2 teaspoons baking powder
  3. 1/2 teaspoon salt
  4. 1 cup (2 sticks) unsalted butter, softened
  5. 2 cups granulated sugar
  6. 4 large eggs
  7. 1 teaspoon pure vanilla extract
  8. 1 teaspoon almond extract
  9. 1 1/2 cups whole milk

For the Frosting:

  1. 1 cup (2 sticks) unsalted butter, softened
  2. 4 cups powdered sugar
  3. 1/4 cup whole milk
  4. 1 teaspoon almond extract
  5. A pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla and almond extracts.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Divide the batter evenly among the prepared pans and smooth the tops.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  8. For the frosting, beat together the softened butter, powdered sugar, milk, almond extract, and a pinch of salt until smooth and creamy.
  9. Once the cakes are completely cooled, frost the layers with the almond frosting, stacking them on top of each other.
  10. Decorate the cake as desired, perhaps with additional almond slices or edible flowers.

This white almond wedding cake is sure to be a hit at any celebration, especially weddings. Adjustments can be made to suit personal preferences, and it’s a good idea to do a small test batch before the big day to ensure the flavors and textures meet your expectations.
