Ingredients:

  • 4 large potatoes, peeled and grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional, for added flavor)
  • 2 eggs, beaten
  • Vegetable oil for frying

Instructions:

  1. Prepare the Potatoes:
    • Peel and grate the potatoes using a box grater or a food processor.
    • Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
  2. Mix Ingredients:
    • In a large bowl, combine the grated potatoes, chopped onion, minced garlic, flour, cornstarch, baking powder, salt, black pepper, and paprika (if using).
    • Add the beaten eggs and mix everything together until well combined.
  3. Heat Oil:
    • In a large skillet or frying pan, heat about 1/2 inch of vegetable oil over medium-high heat.
  4. Form Fritters:
    • Take a spoonful of the potato mixture and drop it into the hot oil, flattening it slightly with the back of the spoon. You can shape them into small patties.
  5. Fry the Fritters:
    • Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
    • Use a slotted spoon to remove the fritters from the oil and place them on a plate lined with paper towels to absorb any excess oil.
  6. Serve:
    • Serve the potato fritters hot with your favorite dipping sauce. They go well with sour cream, ketchup, or a yogurt-based dip.
  7. Optional Additions:
    • Feel free to customize the recipe by adding grated cheese, chopped herbs (such as parsley or chives), or even a dash of hot sauce to the potato mixture for extra flavor.
