Certainly! Cherry Cheese Coffee Cake is a delicious and indulgent treat that combines the flavors of sweet cherries, creamy cheese, and a tender coffee cake. Here’s a basic recipe for you to try:

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

For the Filling:

  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Cherry Topping:

  • 1 1/2 cups fresh or canned cherries, pitted and halved
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Begin and end with the dry ingredients. Mix until just combined.
  5. In a separate bowl, prepare the cream cheese filling by beating together the softened cream cheese, sugar, egg, and vanilla extract until smooth.
  6. Spread half of the cake batter into the prepared baking dish. Spoon the cream cheese filling over the batter, spreading it evenly. Drop spoonfuls of the remaining cake batter over the cream cheese filling.
  7. In a small bowl, toss the halved cherries with sugar and cornstarch. Distribute the cherry mixture over the top of the cake batter.
  8. Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.
  10. Once cooled, you can optionally drizzle with a simple glaze made of powdered sugar and milk for extra sweetness.
