The exact recipe for cowboy cookies can vary, but here’s a basic recipe that you can use as a starting point:

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups old-fashioned oats
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped nuts (such as walnuts or pecans)
  • 1/2 cup shredded coconut

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  3. Beat in the eggs, one at a time, and then add the vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
  6. Stir in the oats, chocolate chips, chopped nuts, and shredded coconut. The mixture will be thick and chunky.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets, leaving some space between each cookie.
  8. Bake in the preheated oven for about 10 to 12 minutes, or until the edges of the cookies are golden brown.
  9. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
