PANERA BROCCOLI CHEESE SOUP

Certainly! Here’s a simple recipe for Panera’s Broccoli Cheddar Soup:

Ingredients:

  • 1/4 cup unsalted butter
  • 1/2 cup diced yellow onion
  • 1/4 cup all-purpose flour
  • 2 cups half-and-half
  • 2 cups low-sodium chicken broth
  • 2 cups broccoli florets, chopped into small pieces
  • 1 cup carrot, grated
  • 2 1/2 cups sharp cheddar cheese, shredded
  • Salt and pepper, to taste
  • 1/4 teaspoon nutmeg (optional)

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the diced onion and sauté until softened.
  2. Sprinkle the flour over the onions and butter, stirring continuously to create a roux. Cook for a few minutes to remove the raw taste of the flour.
  3. Slowly pour in the half-and-half while stirring to combine. Continue to stir until the mixture thickens.
  4. Add the chicken broth to the pot, stirring to combine. Allow the mixture to simmer for about 10 minutes, or until it thickens.
  5. Add the chopped broccoli and grated carrot to the pot. Simmer until the vegetables are tender, about 15-20 minutes.
  6. Reduce the heat to low and gradually stir in the shredded cheddar cheese. Continue stirring until the cheese is melted and the soup is smooth.
  7. Season the soup with salt, pepper, and nutmeg (if using). Adjust the seasonings to taste.
  8. Allow the soup to simmer for an additional 10 minutes to let the flavors meld.
  9. Serve hot and enjoy!

Feel free to customize the recipe to suit your preferences. You can also garnish the soup with additional shredded cheese or croutons if desired.
