Here’s a super quick 15-minute lemon cake recipe – perfect for when you want a fast, citrusy treat. This is a microwave mug cake-style lemon cake, which bakes in under 2 minutes, and the whole process (prep + cook + optional glaze) takes about 15 minutes total.

For the cake:

  • 4 tbsp all-purpose flour

  • 2 tbsp granulated sugar

  • 1/4 tsp baking powder

  • Pinch of salt

  • 3 tbsp milk (dairy or non-dairy)

  • 1 tbsp vegetable oil (or melted butter)

  • 1 tbsp lemon juice

  • 1/2 tsp lemon zest (optional but recommended)

  • 1/4 tsp vanilla extract (optional)

For the glaze (optional but yum):

  • 2 tbsp powdered sugar

  • 1 tsp lemon juice (adjust for thickness)

  1. Mix the dry ingredients
    In a microwave-safe mug or small bowl, combine:

    • 4 tbsp flour

    • 2 tbsp sugar

    • 1/4 tsp baking powder

    • Pinch of salt

  2. Add the wet ingredients
    Stir in:

    • 3 tbsp milk

    • 1 tbsp oil

    • 1 tbsp lemon juice

    • 1/2 tsp lemon zest (if using)

    • 1/4 tsp vanilla (if using)

    Mix until smooth and no lumps remain.

  3. Microwave it

    • Microwave on high for 1 minute and 15 seconds to 1 minute 30 seconds, depending on your microwave (start checking at 1:15).

    • Cake should rise and look set on top. If undercooked, microwave in 10-second intervals.

  4. Make the glaze (optional)
    In a small bowl, stir:

    • 2 tbsp powdered sugar

    • 1 tsp lemon juice
      Adjust until it’s pourable but thick.

  5. Serve

    • Let the cake cool for 2–3 minutes.

    • Drizzle the glaze on top.

    • Enjoy warm!
