BEEF ENCHILADAS with extra cheese

Here’s a delicious, cheesy beef enchiladas recipe that’s perfect for a hearty meal — loaded with extra cheese just like you asked. 🌯🧀🔥


🌮 BEEF ENCHILADAS WITH EXTRA CHEESE

🧂 Ingredients:

For the beef filling:

  • 1 lb (450g) ground beef

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp smoked paprika

  • Salt & pepper to taste

  • 1/2 cup enchilada sauce (for the meat)

  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

For the enchiladas:

  • 8 flour or corn tortillas (6–8 inches)

  • 2–2½ cups enchilada sauce (canned or homemade)

  • 2½–3 cups shredded cheese (the extra cheese part!)

  • Optional toppings: sour cream, chopped cilantro, diced tomatoes, green onions


🔥 Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Cook the beef filling:

    • In a large skillet over medium heat, cook ground beef until browned.

    • Add onion and garlic; cook 3–4 minutes until softened.

    • Stir in chili powder, cumin, smoked paprika, salt, and pepper.

    • Add 1/2 cup enchilada sauce and 1 cup shredded cheese to the beef. Mix well, then remove from heat.

  3. Assemble the enchiladas:

    • Spread 1/2 cup of enchilada sauce in the bottom of a 9×13-inch baking dish.

    • Warm tortillas slightly (microwave 30 sec wrapped in a towel) to make them pliable.

    • Spoon beef mixture into each tortilla (about 1/4 cup), roll tightly, and place seam-side down in the dish.

  4. Top and bake:

    • Pour remaining enchilada sauce evenly over the rolled tortillas.

    • Sprinkle the remaining extra cheese generously on top.

    • Bake uncovered for 20–25 minutes until bubbly and golden.

  5. Finish and serve:

    • Let cool slightly, then garnish with your favorite toppings.

    • Serve with Mexican rice, beans, or tortilla chips.
