🫐 Fluffy Blueberry Biscuits Recipe
Ingredients
Dry:
-
2 cups all-purpose flour
-
1 tbsp baking powder
-
½ tsp baking soda
-
½ tsp salt
-
3 tbsp granulated sugar
Cold Ingredients:
-
6 tbsp unsalted butter, cold and cut into small cubes
-
1 cup fresh or frozen blueberries (keep frozen if using frozen)
Wet:
-
¾ cup buttermilk (plus more for brushing tops)
-
1 tsp vanilla extract
-
Optional: Zest of 1 lemon for brightness
Topping (optional):
-
Coarse sugar for sprinkling
-
Glaze (powdered sugar + milk or lemon juice)
Instructions
-
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
-
Mix dry ingredients:
In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar. -
Cut in butter:
Add cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to work it in until the mixture resembles coarse crumbs with pea-sized pieces. -
Add blueberries:
Gently fold in blueberries. If using frozen, do not thaw to prevent color bleeding. -
Mix wet ingredients:
In a separate bowl or measuring cup, mix buttermilk and vanilla (add lemon zest here if using). -
Combine:
Pour wet ingredients into the dry ingredients and gently mix just until combined. Do not overmix. -
Shape biscuits:
Turn dough out onto a floured surface. Pat into a 1-inch thick rectangle. Fold it in half once or twice (for extra flakiness), then pat down again. Cut into rounds using a biscuit cutter or just cut into squares. -
Bake:
Place biscuits on the baking sheet, close together for softer sides or spaced apart for crispier edges. Brush tops with buttermilk and sprinkle with coarse sugar if desired. -
Bake for 15–18 minutes, or until golden brown on top.
-
Optional glaze:
Mix ½ cup powdered sugar with 1–2 tsp milk or lemon juice. Drizzle over slightly cooled biscuits.
