🧀 Cheese Stuffed Meatballs Recipe
Ingredients:
-
1 lb (450g) ground beef (or a mix of beef & pork)
-
1 large egg
-
1/2 cup breadcrumbs (Italian seasoned works best)
-
1/4 cup grated Parmesan cheese
-
2 cloves garlic, minced
-
2 tbsp fresh parsley, chopped (or 1 tsp dried)
-
1 tsp Italian seasoning
-
1/2 tsp red pepper flakes (optional)
-
1 tsp salt
-
1/2 tsp black pepper
-
1/4 cup milk
-
8–10 cubes mozzarella cheese (or cheddar, provolone, or string cheese pieces)
-
2 tbsp olive oil (for searing)
-
2 cups marinara sauce (store-bought or homemade)
Instructions:
-
Prepare the Meat Mixture:
In a large bowl, combine ground beef, egg, breadcrumbs, Parmesan, garlic, parsley, Italian seasoning, red pepper flakes, salt, pepper, and milk. Mix until just combined (don’t overmix or meatballs get tough). -
Form Meatballs:
Take about 2 tbsp of meat mixture, flatten it in your hand, place a cheese cube in the center, and wrap the meat around it, sealing tightly. Roll into a smooth ball. Repeat with remaining meat and cheese. -
Sear Meatballs:
Heat olive oil in a skillet over medium-high heat. Add meatballs and sear on all sides until browned (about 5–7 minutes). -
Simmer in Sauce:
Pour marinara sauce into the skillet (or transfer meatballs to a baking dish and pour sauce over). Cover and let simmer on low for 15–20 minutes, until meatballs are cooked through and cheese inside is melted. -
Serve & Enjoy:
Garnish with extra Parmesan and parsley. Serve over spaghetti, in a sub roll, or with crusty garlic bread.
