🥕 Roasted Carrots with Whipped Ricotta and Hot Honey

✅ Ingredients:

For the carrots:

  • 1 lb carrots, peeled and cut in half lengthwise

  • 2 tbsp olive oil

  • Salt & pepper, to taste

  • ½ tsp garlic powder (optional)

  • ½ tsp smoked paprika (optional)

For the whipped ricotta:

  • 1 cup whole milk ricotta

  • 2 tbsp cream cheese (softened) (optional for extra creaminess)

  • 1 tbsp olive oil

  • Salt, to taste

For the hot honey:

  • ¼ cup honey

  • ½–1 tsp red pepper flakes (adjust to heat preference)

  • ½ tsp apple cider vinegar (optional, for balance)

To finish:

  • Fresh herbs (thyme, parsley, or chives)

  • Toasted pistachios or walnuts (optional for crunch)

  • Flaky sea salt


🔥 Instructions:

  1. Roast the carrots:

    • Preheat oven to 425°F (220°C).

    • Toss carrots with olive oil, salt, pepper, garlic powder, and paprika.

    • Spread on a baking sheet in a single layer.

    • Roast for 20–25 minutes, turning halfway, until tender and caramelized.

  2. Make the whipped ricotta:

    • In a food processor, blend ricotta, cream cheese (if using), olive oil, and a pinch of salt until smooth and fluffy (about 1–2 minutes).

    • Taste and adjust salt if needed. Set aside.

  3. Prepare hot honey:

    • In a small saucepan, gently warm honey with red pepper flakes over low heat (do not boil) for 2–3 minutes.

    • Stir in apple cider vinegar if using. Let it sit to infuse while carrots finish roasting.

  4. Assemble:

    • Spread whipped ricotta on a serving plate.

    • Top with warm roasted carrots.

    • Drizzle generously with hot honey.

    • Garnish with fresh herbs, nuts, and a sprinkle of flaky sea salt.
