Here’s a delicious and hearty recipe for Mashed Potato Pancakes with Meat Filling—crispy on the outside, soft and savory on the inside with a flavorful meat center.


Mashed Potato Pancakes with Meat Filling

Ingredients

For the Potato Dough:
  • 3 cups mashed potatoes (preferably cold, leftover works great)

  • 1 large egg

  • 1/3 cup flour (more as needed)

  • Salt & pepper, to taste

  • Optional: 2 tbsp chopped chives or green onions

For the Meat Filling:
  • 1/2 lb (225g) ground beef or ground chicken/turkey

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 1/2 tsp paprika

  • 1/4 tsp cumin (optional)

  • Salt & pepper, to taste

  • 1 tbsp oil or butter (for sautéing)

For Frying:
  • 2–3 tbsp oil

  • Optional: Sour cream or yogurt, for serving


Instructions

  1. Prepare the Meat Filling:

    • Heat oil in a skillet over medium heat.

    • Sauté onions and garlic until soft.

    • Add ground meat, paprika, cumin, salt, and pepper.

    • Cook until meat is browned and cooked through.

    • Set aside to cool.

  2. Make the Potato Dough:

    • In a large bowl, combine mashed potatoes, egg, flour, salt, pepper, and chives (if using).

    • Mix until a soft, pliable dough forms. Add more flour if it’s too sticky.

  3. Assemble the Pancakes:

    • Take a small ball of potato dough (about 1/4 cup).

    • Flatten it into a disc in your hand.

    • Place 1–2 tsp of the meat filling in the center.

    • Fold the dough over the filling and seal the edges, forming a round patty.

    • Flatten gently into a pancake shape.

  4. Fry the Pancakes:

    • Heat oil in a non-stick skillet over medium heat.

    • Fry pancakes for 3–4 minutes per side, until golden and crispy.

    • Drain on paper towels.

  5. Serve:

    • Serve warm with sour cream, plain yogurt, or a side salad.
