Hashbrown Casserole Recipes

Here are three delicious hashbrown casserole recipes—from classic to cheesy to meaty—perfect for breakfast, brunch, or comfort dinners:


🧀 1. Classic Cheesy Hashbrown Casserole (Cracker Barrel Style)

Ingredients:

  • 1 (30 oz) bag frozen shredded hashbrowns (thawed)

  • 1 (10.5 oz) can cream of chicken soup

  • 2 cups shredded cheddar cheese

  • 1 cup sour cream

  • ½ cup chopped onion

  • ½ cup melted butter

  • Salt & pepper to taste

  • Optional: crushed cornflakes + 2 tbsp melted butter (for topping)

Instructions:

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, mix hashbrowns, soup, cheese, sour cream, onion, melted butter, salt, and pepper.

  3. Spread into a greased 9×13″ baking dish.

  4. (Optional) Top with cornflake mixture for crunch.

  5. Bake 45–50 minutes, until golden and bubbly.


🥓 2. Loaded Breakfast Hashbrown Casserole

Ingredients:

  • 1 (30 oz) bag hashbrowns (thawed)

  • 1 lb breakfast sausage or bacon (cooked & crumbled)

  • 6 large eggs

  • 1 cup milk

  • 1 ½ cups shredded cheddar cheese

  • ½ cup chopped green onions or bell peppers

  • Salt, pepper, and paprika to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13″ dish.

  2. In a skillet, cook sausage or bacon. Set aside.

  3. In a large bowl, beat eggs with milk, then mix in hashbrowns, meat, cheese, and veggies.

  4. Pour into baking dish. Sprinkle with paprika.

  5. Bake 40–45 minutes until eggs are set and top is golden.


🥦 3. Veggie Hashbrown Casserole (Meatless Option)

Ingredients:

  • 1 (30 oz) bag hashbrowns (thawed)

  • 1 ½ cups chopped broccoli (blanched)

  • 1 cup chopped mushrooms

  • 1 (10.5 oz) can cream of mushroom soup

  • 1 cup shredded cheese (cheddar or Swiss)

  • ½ cup sour cream

  • ½ cup chopped onions

  • Salt, pepper, garlic powder to taste

Instructions:

  1. Preheat oven to 350°F (175°C).

  2. Mix all ingredients in a bowl until well combined.

  3. Spread into greased baking dish.

  4. Bake for 40–45 minutes until golden brown.
