Zesty Shrimp & Avocado Rice Bowls with Cilantro Lime Sauce

🥣 Ingredients

For the Bowls:

  • 1 lb (450g) shrimp, peeled & deveined

  • 1 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp smoked paprika

  • Salt & pepper, to taste

  • 2 cups cooked rice (white, brown, or jasmine)

  • 1 ripe avocado, diced

  • 1 cup cherry tomatoes, halved

  • ½ cup canned corn, drained

  • ¼ red onion, finely diced

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges (for serving)


For the Cilantro Lime Sauce:

  • ½ cup plain Greek yogurt or sour cream

  • ½ cup fresh cilantro leaves

  • 1 garlic clove

  • Juice of 1 lime

  • 1 tbsp olive oil

  • Salt, to taste

  • 1–2 tbsp water (to thin, as needed)


🧑‍🍳 Instructions

  1. Make the Cilantro Lime Sauce:

    • Blend cilantro, garlic, lime juice, yogurt/sour cream, olive oil, and salt in a blender or food processor until smooth.

    • Add water as needed to reach desired consistency. Set aside.

  2. Cook the Shrimp:

    • Toss shrimp with olive oil, garlic, chili powder, cumin, paprika, salt, and pepper.

    • Heat a skillet over medium-high heat. Sauté shrimp 2–3 minutes per side or until pink and cooked through.

  3. Assemble the Bowls:

    • Divide cooked rice into bowls.

    • Top with shrimp, avocado, cherry tomatoes, corn, and red onion.

    • Drizzle generously with cilantro lime sauce.

  4. Garnish & Serve:

    • Sprinkle fresh cilantro and add a lime wedge.

    • Serve immediately and enjoy!
