🍋 Luscious Lemon Raspberry Swirl Cheesecake Cups

Ingredients

For the crust:

  • 1 cup graham cracker crumbs (about 8 full crackers)

  • 2 tbsp granulated sugar

  • 4 tbsp unsalted butter, melted

For the raspberry swirl:

  • 1 cup fresh or frozen raspberries

  • 2 tbsp granulated sugar

  • 1 tsp lemon juice

  • 1 tsp cornstarch mixed with 1 tsp water (optional, for thickening)

For the cheesecake filling:

  • 16 oz (2 blocks) cream cheese, softened

  • 2/3 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • Zest of 1 lemon

  • 2 tbsp fresh lemon juice

  • 1/4 cup sour cream


🧁 Instructions

1. Prepare the crust

  1. Preheat oven to 325°F (163°C). Line a muffin tin with 12 paper liners.

  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.

  3. Divide evenly between liners (about 1 tablespoon per cup). Press down firmly with the back of a spoon.

  4. Bake for 5 minutes, then let cool slightly.

2. Make the raspberry swirl

  1. In a small saucepan over medium heat, combine raspberries, sugar, and lemon juice.

  2. Cook until berries break down (5–7 minutes), stirring often.

  3. For a thicker sauce, stir in cornstarch slurry and simmer for 1–2 more minutes.

  4. Strain through a fine sieve for a smoother swirl (optional). Let cool.

3. Make the lemon cheesecake filling

  1. Beat softened cream cheese until smooth and fluffy.

  2. Add sugar, then mix in eggs one at a time.

  3. Stir in vanilla, lemon zest, lemon juice, and sour cream. Mix until smooth and creamy.

4. Assemble and swirl

  1. Spoon cheesecake batter over the crusts, filling each liner nearly to the top.

  2. Drop 1–2 small spoonfuls of raspberry sauce on each.

  3. Use a toothpick or skewer to gently swirl raspberry sauce into the batter.

5. Bake and chill

  1. Bake for 18–22 minutes, or until centers are just set and slightly jiggly.

  2. Cool completely at room temperature, then refrigerate for at least 3 hours or overnight.

  • Top with fresh raspberries, whipped cream, or a lemon twist.

  • Best served chilled for the creamiest texture.
