Here’s a classic recipe for Old Fashioned 7Up Pound Cake, a beloved Southern dessert known for its moist texture, crisp crust, and subtle citrus flavor from the soda.


🍋 Old Fashioned 7Up Pound Cake

Ingredients:

For the cake:

  • 3 sticks (1 ½ cups) unsalted butter, room temperature

  • 3 cups granulated sugar

  • 5 large eggs, room temperature

  • 3 cups all-purpose flour, sifted

  • 2 tablespoons lemon juice (optional for extra tang)

  • 1 teaspoon vanilla extract

  • ¾ cup 7Up (not diet or sugar-free)

For the glaze (optional but delicious):

  • 1 cup powdered sugar

  • 1–2 tablespoons lemon juice or 7Up (for a milder flavor)

  • ½ teaspoon vanilla extract


Instructions:

  1. Preheat the oven:
    To 325°F (165°C). Grease and flour a 10-inch Bundt pan thoroughly.

  2. Cream butter and sugar:
    In a large bowl, cream the butter and sugar together using a hand or stand mixer until very light and fluffy (about 5–7 minutes). This step is key for a good texture.

  3. Add eggs one at a time:
    Beat in eggs, one at a time, making sure each is fully incorporated before adding the next.

  4. Add flour and 7Up alternately:
    Reduce mixer speed and add the sifted flour in three parts, alternating with the 7Up in two parts. Start and end with flour. Mix just until combined.

  5. Add flavorings:
    Stir in lemon juice (if using) and vanilla extract.

  6. Pour and bake:
    Pour the batter into the prepared Bundt pan and smooth the top. Bake for 75–85 minutes, or until a toothpick inserted in the center comes out clean.

  7. Cool:
    Let the cake cool in the pan for about 10–15 minutes, then carefully turn out onto a wire rack to cool completely.

  8. Optional glaze:
    Mix glaze ingredients until smooth and pour over cooled cake.
