Ingredients:

For the Meatloaf:

  • 2 lbs ground beef (80/20 for juiciness)

  • 1 cup breadcrumbs (panko or plain)

  • 2 eggs

  • 1/2 cup milk

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tbsp Worcestershire sauce

  • 1/2 cup sautéed onions (optional but recommended)

  • 1 cup chopped and sautéed mushrooms (button or cremini)

  • 1 cup shredded Swiss cheese

  • 6–8 slices bacon (to wrap or lay over the top)

Optional Topping Glaze:

  • 1/4 cup ketchup

  • 2 tbsp brown sugar

  • 1 tbsp Dijon mustard


Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with foil or parchment paper.

  2. Sauté Mushrooms & Onions:

    • In a skillet over medium heat, sauté chopped mushrooms (and onions, if using) with a bit of butter or oil until soft and browned. Set aside to cool.

  3. Make the Meat Mixture:

    • In a large bowl, combine ground beef, breadcrumbs, eggs, milk, seasonings, Worcestershire sauce, cooled mushroom mixture, and shredded Swiss cheese.

    • Mix gently with your hands or a spoon until just combined — don’t overmix.

  4. Shape the Loaf:

    • Form the mixture into a loaf shape on a lined baking sheet or place it into a loaf pan.

  5. Bacon Layer:

    • Drape bacon slices over the top (or wrap around the loaf) so it crisps while baking.

  6. Glaze (Optional):

    • Mix ketchup, brown sugar, and Dijon mustard in a bowl.

    • Brush on top of the bacon for a sweet-savory finish.

  7. Bake:

    • Bake uncovered for 55–65 minutes, or until internal temperature reaches 160°F (71°C).

    • If bacon isn’t crisped to your liking, broil the top for 2–3 minutes.

  8. Rest & Serve:

    • Let rest 10 minutes before slicing to keep it juicy.

    • Serve with mashed potatoes or a green veggie.
