Sliced baked potatoes are a delightful and simple dish that combines the creaminess of a baked potato with a crispy, seasoned exterior. Here’s a straightforward recipe for making sliced baked potatoes:

Sliced Baked Potatoes

Ingredients:

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 2-3 cloves of garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

Prepare the Potatoes:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil and lightly grease it with non-stick cooking spray or a drizzle of olive oil.
  2. Scrub the potatoes thoroughly under running water to remove any dirt. Pat them dry with a clean kitchen towel.
  3. With a sharp knife, slice the potatoes thinly but not all the way through, leaving the bottom intact. Aim for slices that are about 1/8-inch apart.

Season and Bake the Potatoes:

  1. In a small bowl, mix together the olive oil, minced garlic, paprika, dried thyme, salt, and pepper.
  2. Gently brush the seasoned oil mixture over the entire surface of each potato, making sure to get the oil in between the slices.
  3. Place the potatoes on the prepared baking sheet and bake for 40-50 minutes, or until they are tender on the inside and crispy on the edges.
  4. If desired, you can sprinkle some extra salt and pepper over the potatoes during the baking process.

Serve the Sliced Baked Potatoes:

  1. Remove the potatoes from the oven and let them cool for a few minutes.
  2. Garnish with freshly chopped parsley, if desired, for added freshness and color.
  3. Serve the sliced baked potatoes as a delightful side dish alongside your favorite main course, or enjoy them on their own as a satisfying snack.
