Here’s a Mediterranean Ground Beef Skillet recipe that’s easy, flavorful, and ready in about 30 minutes. Perfect for a healthy dinner or meal prep!


🥘 Mediterranean Ground Beef Skillet

Ingredients:

  • 1 lb ground beef (lean, 90/10 preferred)

  • 2 tbsp olive oil

  • 1 small red onion, diced

  • 3 garlic cloves, minced

  • 1 red bell pepper, diced

  • 1 zucchini, diced

  • 1 cup cherry tomatoes, halved

  • 1/2 cup kalamata olives, sliced

  • 1 tsp dried oregano

  • 1/2 tsp ground cumin

  • Salt & pepper to taste

  • 1/4 tsp crushed red pepper flakes (optional)

  • 1/2 lemon, juiced

  • 1/4 cup crumbled feta cheese

  • Fresh parsley or basil, chopped (for garnish)


Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 2–3 minutes until softened.

  2. Add garlic and ground beef. Cook until browned, breaking it up with a spoon—about 6–8 minutes. Drain excess fat if necessary.

  3. Stir in the bell pepper and zucchini. Cook for 5 minutes, until slightly tender.

  4. Add cherry tomatoes, olives, oregano, cumin, red pepper flakes, salt, and pepper. Stir and let cook for 3–4 more minutes, until tomatoes soften slightly.

  5. Squeeze in lemon juice and stir well to combine.

  6. Turn off the heat and sprinkle with feta cheese and fresh herbs.


Serving Suggestions:

  • Serve over rice, couscous, quinoa, or cauliflower rice for a low-carb option.

  • Pair with a side of pita bread or a simple Greek salad.
