Here’s a flavorful and easy Black Pepper Chicken with Mushrooms recipe that’s perfect for a quick weeknight dinner. It’s inspired by Asian stir-fry flavors, combining tender chicken, savory mushrooms, and bold black pepper.


Black Pepper Chicken with Mushrooms

Ingredients:

For the chicken marinade:

  • 1 lb (450g) boneless, skinless chicken thighs or breasts, thinly sliced

  • 1 tbsp soy sauce

  • 1 tsp cornstarch

  • 1 tsp sesame oil

  • 1/2 tsp ground black pepper

For the stir-fry:

  • 2 tbsp vegetable oil

  • 2 cups mushrooms (shiitake, button, or cremini), sliced

  • 1 small onion, sliced

  • 3 garlic cloves, minced

  • 1/2 inch ginger, minced (optional)

  • 1 bell pepper, sliced (optional for color and crunch)

  • 1–2 green onions, chopped

For the sauce:

  • 1 tbsp oyster sauce

  • 1 tbsp light soy sauce

  • 1 tsp dark soy sauce (optional, for color)

  • 1 tsp sugar

  • 1 tsp coarsely ground black pepper (adjust to taste)

  • 2 tbsp water or chicken broth

  • 1/2 tsp cornstarch (to thicken)


Instructions:

  1. Marinate the Chicken:

    • In a bowl, mix sliced chicken with soy sauce, sesame oil, cornstarch, and black pepper.

    • Let marinate for at least 15 minutes (up to 30 minutes for deeper flavor).

  2. Make the Sauce:

    • In a small bowl, combine oyster sauce, light soy sauce, dark soy sauce (if using), sugar, black pepper, water, and cornstarch. Stir well and set aside.

  3. Cook the Chicken:

    • Heat 1 tbsp oil in a large skillet or wok over medium-high heat.

    • Add the marinated chicken and stir-fry until browned and cooked through (about 5–6 minutes). Remove and set aside.

  4. Stir-fry the Vegetables:

    • Add another 1 tbsp oil to the pan. Add garlic, ginger (if using), onion, mushrooms, and bell pepper.

    • Stir-fry for 3–4 minutes until vegetables are tender but still crisp.

  5. Combine Everything:

    • Return the chicken to the pan.

    • Pour in the sauce and toss everything together. Stir-fry for another 2–3 minutes until the sauce thickens and coats the ingredients evenly.

  6. Garnish and Serve:

    • Add chopped green onions.

    • Serve hot over steamed rice or noodles.


Tips:

  • For extra heat, add a pinch of crushed red pepper or chili flakes.

  • Use freshly cracked black pepper for a more intense flavor.

  • Substitute chicken with tofu for a vegetarian version.
