-
½ cup (45g) unsweetened cocoa powder
-
½ tsp salt
-
2 tsp vanilla extract
-
¼ cup (60ml) heavy cream (or as needed for consistency)
Instructions
Make the Cake:
-
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
-
Mix dry ingredients: In a large bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
-
Add wet ingredients: Add eggs, milk, oil, and vanilla to the dry mix. Beat on medium speed for 2 minutes.
-
Add hot liquids: Carefully stir in boiling water (or coffee). The batter will be thin – this is normal.
-
Bake: Divide batter evenly between pans. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
-
Cool: Let cakes cool in the pans for 10 minutes, then remove and place on wire racks to cool completely.
Make the Frosting:
-
Cream butter until light and fluffy.
-
Add dry ingredients: Sift in powdered sugar, cocoa, and salt. Beat until smooth.
-
Add liquid: Mix in vanilla and cream until frosting is smooth and spreadable. Add more cream if needed.
Assemble the Cake:
-
Place one cake layer on a serving plate. Spread frosting on top.
-
Top with the second layer and frost the top and sides.
-
Decorate with chocolate shavings, curls, or a dusting of cocoa powder if desired.
