Here’s a recipe for ultra-fluffy, diner-style pancakes that rise tall and stay soft inside—perfect for weekend brunch or any time you want to impress with a stack of clouds:

Ingredients:

  • 1 ½ cups (190g) all-purpose flour

  • 3 ½ tsp baking powder

  • ½ tsp salt

  • 1 tbsp white sugar (or up to 2 tbsp for sweeter pancakes)

  • 1 ¼ cups (300ml) milk (whole or buttermilk)

  • 1 egg

  • 3 tbsp melted butter (plus more for greasing)

  • 1 tsp vanilla extract (optional but recommended)


Instructions:

  1. Preheat your pan or griddle over medium-low heat. Lightly grease with butter or oil.

  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.

  3. In another bowl, whisk the egg, milk, melted butter, and vanilla.

  4. Pour the wet ingredients into the dry, and gently fold until just combined. A few small lumps are okay—do not overmix or the pancakes may be tough.

  5. Let the batter rest for 5–10 minutes. This helps the baking powder activate and gives a fluffier result.

  6. Pour ¼ cup of batter per pancake onto your heated pan. When bubbles form on the surface and the edges look set (about 2–3 minutes), flip carefully and cook for another 1–2 minutes until golden brown.

  7. Serve warm with butter, syrup, fruit, or your favorite toppings.


✅ Tips for Extra Fluffiness:

  • Use buttermilk for more lift and tenderness.

  • Don’t press down on the pancakes while cooking—let them rise naturally.

  • Add a touch of vinegar or lemon juice (½ tsp) to regular milk to mimic buttermilk if needed.
