Here’s a simple and healthy Cottage Cheese & Spinach Crustless Quiche recipe — high in protein, low in carbs, and perfect for breakfast, brunch, or meal prep.


🥧 Cottage Cheese & Spinach Crustless Quiche

Ingredients:

  • 1 cup cottage cheese (full-fat or low-fat)

  • 6 large eggs

  • 1/2 cup milk (dairy or unsweetened plant-based)

  • 1 cup fresh spinach (or 1/2 cup thawed, drained frozen spinach)

  • 1/2 cup shredded cheese (cheddar, mozzarella, or Swiss)

  • 1/4 cup chopped onion (optional)

  • 1 clove garlic, minced (optional)

  • Salt & pepper to taste

  • Pinch of nutmeg (optional but traditional)


Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or round baking dish.

  2. Sauté onion and garlic in a pan over medium heat for 3–5 minutes if using. Add spinach and cook just until wilted. Let cool slightly.

  3. In a large bowl, whisk together eggs, milk, and cottage cheese. Season with salt, pepper, and nutmeg if using.

  4. Stir in the spinach mixture and shredded cheese.

  5. Pour mixture into the prepared dish and smooth the top.

  6. Bake for 35–45 minutes, or until the center is set and the top is lightly golden.

  7. Cool for 5–10 minutes before slicing. Serve warm or at room temperature.


🌿 Tips:

  • Add cooked bacon or sautéed mushrooms for extra flavor.

  • Use egg whites or egg substitute for a lighter version.

  • Keeps well in the fridge for up to 4 days; reheat gently in the microwave or oven.
