Ingredients
For the crust:

1 cup (2 sticks) unsalted butter, softened

For the lemon filling:

4 large eggs

Instructions

Preheat oven to 350°F (175°C).
Line a 9×13-inch baking dish with parchment paper or lightly grease it. -
Make the crust:
In a medium bowl, cream together butter and sugar until smooth. Mix in flour and salt until crumbly dough forms. Press evenly into the bottom of the pan.
Bake for 18–20 minutes, or until lightly golden. -
Prepare the filling:
While the crust bakes, whisk together sugar and flour in a bowl. Add eggs, lemon juice, and zest (if using), and whisk until smooth and combined. -
Pour filling over hot crust and return to the oven.
Bake for another 20–25 minutes, or until the center is set and no longer jiggles. -
Cool completely.
