Here’s a fresh and flavorful Asparagus, Tomato, and Feta Salad with Balsamic recipe that’s perfect as a side or a light main dish:


Asparagus, Tomato & Feta Salad with Balsamic

Ingredients:

  • 1 bunch asparagus, ends trimmed

  • 1 pint cherry tomatoes, halved

  • 1/2 cup crumbled feta cheese

  • 2 tbsp extra virgin olive oil

  • 1 ½ tbsp balsamic vinegar (or balsamic glaze for a sweeter finish)

  • Salt and freshly ground black pepper, to taste

  • Optional: 1–2 tbsp fresh basil or parsley, chopped

Instructions:

  1. Blanch the asparagus:

    • Bring a pot of salted water to a boil.

    • Add asparagus and cook for 2–3 minutes, just until bright green and tender-crisp.

    • Transfer immediately to a bowl of ice water to stop the cooking. Drain and pat dry.

    • Cut asparagus into 2-inch pieces.

  2. Assemble the salad:

    • In a large bowl, combine asparagus, cherry tomatoes, and crumbled feta.

  3. Dress:

    • Drizzle olive oil and balsamic vinegar over the salad.

    • Toss gently to combine.

    • Season with salt and pepper to taste.

  4. Garnish (optional):

    • Sprinkle with chopped fresh herbs for extra flavor and color.


Tips:

  • For extra crunch, toss in toasted pine nuts or slivered almonds.

  • Serve chilled or at room temperature.
