🥗 Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Dressing

🧂 Ingredients:

For the Bowls:

  • 1 lb (450g) shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 1 tsp chili powder

  • Salt and pepper to taste

  • 2 ripe avocados, sliced or cubed

  • 2 cups cooked rice (white, brown, or cauliflower rice)

  • 1/4 cup chopped cilantro (optional)

For the Mango Salsa:

  • 1 ripe mango, diced

  • 1/2 small red onion, finely diced

  • 1/2 red bell pepper, diced

  • 1 jalapeño, minced (optional)

  • Juice of 1 lime

  • Salt to taste

  • 1 tbsp chopped cilantro

For the Lime-Chili Dressing:

  • Juice of 2 limes

  • 1 tbsp olive oil

  • 1 tsp honey or maple syrup

  • 1/2 tsp chili flakes or chili powder

  • Pinch of salt


🍤 Instructions:

  1. Cook the shrimp:

    • Toss shrimp with olive oil, chili powder, salt, and pepper.

    • Sauté in a hot skillet for 2–3 minutes per side until pink and cooked through. Set aside.

  2. Make the mango salsa:

    • In a bowl, combine diced mango, red onion, red bell pepper, jalapeño, lime juice, cilantro, and salt. Mix gently.

  3. Mix the dressing:

    • Whisk together lime juice, olive oil, honey, chili flakes, and salt in a small bowl or jar.

  4. Assemble the bowls:

    • Start with a base of rice.

    • Top with shrimp, avocado slices, and mango salsa.

    • Drizzle with lime-chili dressing and garnish with cilantro if desired.
