🍰 Super Soft Vanilla Breakfast Cake
Ingredients:
-
1 ½ cups (190g) all-purpose flour
-
1 tsp baking powder
-
½ tsp baking soda
-
¼ tsp salt
-
½ cup (115g) unsalted butter, softened
-
⅔ cup (135g) granulated sugar
-
2 large eggs
-
2 tsp vanilla extract
-
¾ cup (180ml) buttermilk or plain yogurt (for extra softness)
-
Optional: 2 tbsp milk (if batter is too thick)
Instructions:
-
Preheat oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper.
-
Whisk dry ingredients: In a bowl, combine flour, baking powder, baking soda, and salt.
-
Cream butter and sugar: In a separate large bowl, beat softened butter and sugar together until light and fluffy (about 2–3 minutes).
-
Add eggs and vanilla: Beat in eggs one at a time, then add vanilla.
-
Mix in buttermilk and dry ingredients: Alternately add the flour mixture and buttermilk to the butter mixture in three parts, beginning and ending with flour. Mix until just combined—don’t overmix!
-
Bake: Pour the batter into the prepared pan. Smooth the top and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
-
Cool and serve: Let cool in the pan for 10 minutes, then transfer to a rack. Serve warm or at room temperature.
🍓 Optional Toppings:
-
Sliced berries + whipped cream
-
Honey or maple drizzle

A spoonful of Greek yogurt
