Ingredients (Serves 2–4):

  • Spaghetti – 8 oz (about half a box)

  • Chicken breast or thighs – 2, thinly sliced or cubed

  • Burrata cheese – 1 ball (4 oz)

  • Garlic – 4 cloves, minced

  • Unsalted butter – 4 tbsp

  • Olive oil – 2 tbsp

  • Lemon – zest and juice of 1

  • White wine or chicken broth – 1/3 cup (optional for deglazing)

  • Red pepper flakes – 1/4 tsp (optional, for heat)

  • Fresh parsley or basil – chopped, for garnish

  • Salt & black pepper – to taste

  • Parmesan cheese – for topping (optional)


Instructions:

  1. Cook the pasta:

    • Bring a large pot of salted water to a boil. Cook spaghetti to al dente according to package instructions. Reserve 1/2 cup pasta water before draining.

  2. Cook the chicken:

    • Heat 1 tbsp olive oil in a large skillet over medium-high heat.

    • Season chicken with salt and pepper, then sear until golden and cooked through (about 4–5 min per side depending on thickness). Set aside.

  3. Make the lemon butter garlic sauce:

    • In the same pan, reduce heat to medium. Add 4 tbsp butter and 1 tbsp olive oil.

    • Once melted, add minced garlic and red pepper flakes. SautΓ© for about 1–2 minutes until fragrant.

    • Deglaze with white wine or chicken broth (if using), scraping up any browned bits.

    • Add lemon zest and juice. Let the sauce simmer for 2–3 minutes.

    • Stir in reserved pasta water for extra silkiness, if needed.

  4. Combine:

    • Add cooked spaghetti and chicken back into the skillet. Toss to coat in the sauce.

  5. Plate and serve:

    • Divide pasta among plates or serve family-style.

    • Tear burrata over the top of the hot pasta so it gently melts into a creamy topping.

    • Garnish with fresh herbs, cracked pepper, and shaved parmesan if desired.
