🧄 Garlic Chicken Veggie Stir-Fry with Creamy Rice

🐔 Ingredients

For the Stir-Fry:

  • 1 lb chicken breast or thighs, thinly sliced

  • 1 tablespoon olive oil or sesame oil

  • 4 cloves garlic, minced

  • 1 tablespoon soy sauce

  • 1 tablespoon oyster sauce (optional)

  • 1 teaspoon cornstarch (for coating chicken)

  • 1 red bell pepper, sliced

  • 1 cup broccoli florets

  • 1 carrot, julienned

  • ½ cup snap peas or green beans

  • Salt and pepper to taste

  • Chili flakes (optional for heat)

For the Creamy Rice:

  • 1 cup jasmine or basmati rice

  • 2 cups water or chicken broth

  • ¼ cup heavy cream or coconut milk

  • 2 tablespoons cream cheese or grated Parmesan (optional for added richness)

  • Salt to taste


👩‍🍳 Instructions

1. Prep the Rice:

  • Rinse rice and cook in water or broth.

  • Once cooked, stir in cream, cream cheese (or Parmesan), and a pinch of salt. Keep warm.

2. Prep the Chicken:

  • Toss chicken slices with cornstarch, salt, pepper, and a splash of soy sauce. Let sit for 10 minutes.

3. Cook the Stir-Fry:

  • Heat oil in a large pan or wok over medium-high heat.

  • Sauté garlic until fragrant (about 30 seconds).

  • Add chicken and stir-fry until cooked through and lightly golden (5–7 minutes).

  • Toss in the vegetables and stir-fry for another 3–4 minutes, until tender-crisp.

  • Add soy sauce, oyster sauce (if using), and a splash of water to create a light glaze.

4. Assemble:

  • Serve hot stir-fry over the creamy rice.

  • Garnish with green onions, sesame seeds, or a drizzle of chili oil if desired.
