🍗 Crispy Chicken Schnitzel

Ingredients:

  • 2 chicken breasts (butterflied and pounded thin)

  • Salt & pepper

  • 1 cup flour

  • 2 eggs (beaten)

  • 1½ cups breadcrumbs (Panko for extra crispiness)

  • ½ cup grated Parmesan (optional for extra flavor)

  • Oil for frying (vegetable or canola)

Instructions:

  1. Season chicken with salt and pepper.

  2. Dredge each piece in flour, dip in egg, and coat in breadcrumbs (mix with Parmesan if using).

  3. Heat oil in a pan and fry schnitzels 3–4 minutes per side until golden and crispy.

  4. Place on a wire rack or paper towel to drain excess oil.


🍄 Creamy Mushroom Sauce

Ingredients:

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 1 small onion or shallot (finely chopped)

  • 2 garlic cloves (minced)

  • 200g mushrooms (sliced, any variety)

  • ½ cup heavy cream (or crème fraîche)

  • ½ cup chicken or vegetable broth

  • Fresh thyme or parsley (optional)

  • Salt & pepper to taste

Instructions:

  1. In a skillet, heat butter and oil, then sauté onion and garlic until soft.

  2. Add mushrooms and cook until golden and tender.

  3. Pour in broth, let it reduce slightly, then stir in cream.

  4. Simmer until thickened, season with salt, pepper, and herbs.


🥗 Fresh Salad (Simple & Bright)

Ingredients:

  • Mixed greens (arugula, baby spinach, romaine)

  • Cherry tomatoes (halved)

  • Cucumber (sliced)

  • Red onion (thinly sliced)

  • Lemon juice or balsamic vinegar

  • Olive oil

  • Salt & pepper

Instructions:

  1. Toss all salad ingredients in a large bowl.

  2. Drizzle with olive oil and lemon juice or vinegar.

  3. Season and mix gently before serving.
