A Lemon Cream Cheese Tart sounds delicious! It’s a perfect combination of tangy lemon and smooth cream cheese, which gives a rich and creamy texture to the tart. Here’s a simple recipe for a Lemon Cream Cheese Tart:

Ingredients:

For the crust:

  • 1 ½ cups graham cracker crumbs (or digestive biscuits)

  • 1/4 cup sugar

  • 1/2 cup unsalted butter, melted

For the cream cheese filling:

  • 8 oz (225g) cream cheese, softened

  • 1/2 cup powdered sugar

  • 1 tsp vanilla extract

  • 1 tbsp lemon zest (from about 2 lemons)

  • 1 tbsp fresh lemon juice

  • 1/4 cup heavy cream (whipped to soft peaks)

For the lemon curd topping:

  • 1/2 cup fresh lemon juice (from about 3 lemons)

  • 1/2 cup sugar

  • 2 large egg yolks

  • 1/4 cup butter

  • 1 tsp lemon zest

Instructions:

1. Make the crust:

  1. Preheat the oven to 350°F (175°C).

  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until the crumbs are evenly coated.

  3. Press the mixture into the bottom of a tart pan, making sure to spread it evenly along the base and up the sides.

  4. Bake for 8-10 minutes until golden brown. Remove from the oven and let it cool completely.

2. Make the cream cheese filling:

  1. Beat the softened cream cheese in a bowl until smooth.

  2. Add the powdered sugar, vanilla extract, lemon zest, and lemon juice. Continue to beat until everything is well combined and smooth.

  3. Gently fold in the whipped cream until the mixture is light and fluffy.

  4. Spoon the cream cheese mixture into the cooled crust and smooth the top with a spatula.

3. Make the lemon curd:

  1. In a small saucepan, whisk together the lemon juice, sugar, and egg yolks over medium heat.

  2. Stir constantly until the mixture thickens and coats the back of a spoon (about 8-10 minutes). Don’t let it boil.

  3. Remove from heat and stir in the butter and lemon zest until smooth.

  4. Allow the lemon curd to cool to room temperature, then spread it over the cream cheese layer in the tart.

4. Chill and Serve:

  1. Refrigerate the tart for at least 2 hours to allow it to set.

  2. Once chilled, slice and serve, garnished with additional lemon zest or whipped cream, if desired.
