🍫 Brownie Rolls with Ganache Glaze

🧁 Dough (sweet roll-style base):

  • 2¼ tsp (1 packet) active dry yeast

  • ¾ cup warm milk (110°F / 43°C)

  • ¼ cup granulated sugar

  • ¼ cup unsalted butter, melted

  • 1 large egg

  • ½ tsp salt

  • 2¾ cups all-purpose flour

  • ½ cup unsalted butter

  • ½ cup brown sugar

  • ¼ cup granulated sugar

  • ½ cup unsweetened cocoa powder

  • 1 tsp vanilla extract

  • ¼ tsp salt

  • 1 egg

  • ⅓ cup all-purpose flour

  • ½ cup mini chocolate chips or chopped chocolate (optional but encouraged)

🍫 Ganache Glaze:

  • ½ cup heavy cream

  • 1 cup semi-sweet chocolate chips or chopped chocolate

  • 1 tbsp unsalted butter (optional, for shine)


🧑‍🍳 Instructions

1. Make the Dough

  1. In a large bowl, combine warm milk and yeast. Let sit 5–10 minutes until frothy.

  2. Mix in sugar, melted butter, egg, and salt.

  3. Add flour gradually and knead (by hand or mixer) until dough is soft and slightly tacky but not sticky.

  4. Place in greased bowl, cover, and let rise 1–1½ hours or until doubled.

2. Make the Brownie Filling

  1. Melt butter in a saucepan or microwave-safe bowl. Whisk in sugars, cocoa powder, and vanilla.

  2. Stir in egg until smooth. Add flour and salt. Mix well.

  3. Fold in chocolate chips if using. Let cool slightly.

3. Assemble the Rolls

  1. Roll out dough into a 12×16-inch rectangle.

  2. Spread the brownie filling evenly over the dough (leave a ½-inch border).

  3. Roll tightly from the long side into a log. Slice into 9–12 rolls.

  4. Place rolls in a greased 9×13-inch baking dish. Cover and let rise 30–45 minutes.

4. Bake

  • Preheat oven to 350°F (175°C).

  • Bake rolls for 20–25 minutes, until puffed and slightly golden (don’t overbake!).

5. Make the Ganache

  1. Heat cream just until it starts to simmer.

  2. Pour over chocolate and let sit 1 minute. Stir until smooth and glossy.

  3. Stir in butter if using.

6. Glaze & Serve

  • Pour warm ganache over slightly cooled rolls.

  • Serve warm for gooey goodness!
