Ohhh yes, now that’s comfort food at its finest. Here’s a killer recipe for Country Fried Pork Chops with Bacon Gravy—crispy, juicy, and smothered in creamy, smoky goodness. Perfect for a hearty weekend dinner (or honestly, any time you need a food hug).


🐖 Country Fried Pork Chops with Bacon Gravy

Ingredients

For the Pork Chops:

  • 4 boneless or bone-in pork chops (about 1-inch thick)

  • 1 cup buttermilk

  • 1 tsp hot sauce (optional, but adds a nice kick)

  • 1 cup all-purpose flour

  • ½ cup cornstarch (for extra crispiness)

  • 1 tsp paprika

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • Salt & pepper to taste

  • Oil for frying (vegetable or canola)

For the Bacon Gravy:

  • 4 slices thick-cut bacon, chopped

  • 2 tbsp bacon drippings or butter

  • 2 tbsp all-purpose flour

  • 1½ cups whole milk (warm)

  • Salt & black pepper to taste

  • Optional: pinch of cayenne or a splash of hot sauce


Instructions

1. Marinate the pork:

  • In a bowl or zip-top bag, mix the buttermilk and hot sauce.

  • Add pork chops and let them marinate for at least 30 minutes, or overnight in the fridge if you’ve got time.

2. Dredge:

  • In a shallow dish, mix flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper.

  • Remove chops from marinade (let excess drip off), then dredge in the flour mixture. Press to coat well. Let rest on a rack for 10-15 min—helps the coating stick better.

3. Fry:

  • Heat about ½ inch oil in a heavy skillet (cast iron is perfect) to 350°F (175°C).

  • Fry the chops 3–4 minutes per side, until golden brown and cooked through (145°F internal temp).

  • Set on paper towels or a wire rack to drain.

4. Make that glorious bacon gravy:

  • In the same skillet (pour off excess oil, but leave 2 tbsp bacon drippings), cook chopped bacon until crisp.

  • Remove bacon with a slotted spoon; set aside.

  • Add flour to the drippings and whisk into a roux. Cook 1–2 min to lose that raw flour taste.

  • Slowly whisk in warm milk. Simmer, stirring constantly, until thick and creamy (about 3–5 min).

  • Stir in the cooked bacon. Season with salt, pepper, and cayenne or hot sauce if using.

5. Serve:

  • Pour that rich bacon gravy over the crispy pork chops and maybe toss in some mashed potatoes or biscuits on the side. Heaven.
