Here’s a classic cheesecake recipe for you! This is a simple and delicious one that results in a rich and creamy cheesecake.

Classic Cheesecake Recipe

Ingredients

For the crust:

  • 1 ½ cups graham cracker crumbs

  • 2 tablespoons sugar

  • ⅓ cup melted butter

For the filling:

  • 4 (8 oz) packages cream cheese, softened

  • 1 ¼ cups granulated sugar

  • 1 teaspoon vanilla extract

  • 4 large eggs

  • 1 cup sour cream

  • 2 teaspoons all-purpose flour (optional, helps with texture)

Instructions

1. Prepare the crust:

  • Preheat the oven to 325°F (163°C).

  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter.

  • Press the mixture into the bottom of a 9-inch springform pan. Press it down tightly to create an even crust.

  • Bake for 10 minutes. Let it cool while you prepare the filling.

2. Make the filling:

  • In a large bowl, beat the softened cream cheese until smooth and creamy.

  • Add the sugar and vanilla extract. Beat until fully combined.

  • Add the eggs one at a time, mixing well after each addition. Be careful not to overmix.

  • Add sour cream and flour (if using), and mix until smooth.

  • Pour the cream cheese mixture over the cooled crust.

3. Bake the cheesecake:

  • Place the springform pan in the oven and bake for 50-60 minutes or until the center is just set (it may still jiggle slightly).

  • Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door slightly ajar. This helps prevent cracking.

4. Chill and serve:

  • After the cheesecake has cooled, cover and refrigerate for at least 4 hours or preferably overnight.

  • Before serving, you can top it with fresh berries, fruit compote, or a drizzle of caramel or chocolate sauce if desired.
