Fried Strawberry Cheesecake Sandwiches sound absolutely delicious! Here’s a fun and tasty recipe to make them:

Ingredients:

  • For the Cheesecake Filling:

    • 8 oz cream cheese, softened

    • 1/4 cup powdered sugar

    • 1 tsp vanilla extract

    • 1/4 cup heavy cream

  • For the Sandwiches:

    • 2 slices of thick bread (Texas toast, challah, or brioche work great)

    • 4-6 fresh strawberries, thinly sliced

    • 1/4 cup granulated sugar

    • 1 tsp cinnamon (optional)

    • 2 eggs

    • 1/4 cup milk

    • 1/2 tsp vanilla extract

    • 1/2 cup all-purpose flour

    • 1/4 cup cornstarch

    • 1/2 cup breadcrumbs (for a crispy texture)

    • Vegetable oil (for frying)

    • Powdered sugar (for dusting)

Instructions:

  1. Prepare the Cheesecake Filling:

    • In a mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.

    • Gradually add in the heavy cream and mix until the filling is creamy and thickened. Set aside.

  2. Prepare the Strawberries:

    • Slice the strawberries and place them in a bowl.

    • Sprinkle the granulated sugar over the strawberries and mix well. Let them sit for about 10 minutes to macerate and release their juices. You can also add a pinch of cinnamon for extra flavor.

  3. Assemble the Sandwiches:

    • Spread a generous layer of the cheesecake filling onto one slice of bread.

    • Top with a few spoonfuls of the macerated strawberries.

    • Place the second slice of bread on top, pressing down gently to form a sandwich.

  4. Prepare the Coating:

    • In a shallow bowl, beat the eggs, milk, and vanilla extract together.

    • In another bowl, combine the flour and cornstarch.

    • In a third bowl, place the breadcrumbs for a crispy coating.

  5. Fry the Sandwiches:

    • Heat vegetable oil in a large skillet or frying pan over medium heat.

    • Dip each sandwich first into the egg mixture, then into the flour mixture, coating both sides. Finally, dip it into the breadcrumbs for that crispy exterior.

    • Fry the sandwich in the hot oil for about 2-3 minutes per side or until golden brown and crispy. You may need to fry in batches, depending on the size of your pan.

  6. Serve:

    • Once fried, carefully remove the sandwiches from the oil and place them on a paper towel-lined plate to drain excess oil.

    • Dust with powdered sugar and serve warm.
