Ingredients:

  • 1 1/2 cups grated zucchini (about 1 medium zucchini)

  • 1 cup whole wheat flour (or almond flour for a gluten-free option)

  • 1/2 cup Greek yogurt (plain, unsweetened)

  • 2 eggs (or flax eggs if you want a vegan version)

  • 1/4 cup honey or maple syrup (adjust based on sweetness preference)

  • 1/4 cup olive oil or melted coconut oil

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • Optional: 1/4 cup chopped nuts (walnuts, almonds, etc.) or chocolate chips for added texture

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.

  2. Prepare the zucchini: Grate the zucchini and squeeze out excess moisture using a clean towel or paper towels.

  3. Mix dry ingredients: In a medium bowl, whisk together whole wheat flour, baking powder, baking soda, cinnamon, and salt.

  4. Mix wet ingredients: In a large bowl, whisk together Greek yogurt, eggs, honey (or maple syrup), olive oil, and vanilla extract.

  5. Combine: Add the grated zucchini to the wet ingredients and stir to combine. Then, fold in the dry ingredients and mix until just combined. If you’re adding nuts or chocolate chips, fold them in as well.

  6. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
