Pasta with Feta Cheese and Cherry Tomatoes

Here’s a simple and delicious recipe for Pasta with Feta Cheese and Cherry Tomatoes:

Ingredients:

  • 200g pasta (penne, spaghetti, or your favorite type)

  • 200g cherry tomatoes, halved

  • 100g feta cheese, crumbled

  • 2 tablespoons olive oil

  • 1 garlic clove, minced

  • Salt and pepper to taste

  • 1/2 teaspoon dried oregano (optional)

  • Fresh basil leaves (optional, for garnish)

Instructions:

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions, until al dente. Drain, reserving about 1/4 cup of pasta water.

  2. Sauté the garlic and tomatoes: While the pasta cooks, heat the olive oil in a large pan over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for about 5-7 minutes, stirring occasionally, until they soften and release their juices. If you like, add a pinch of dried oregano at this stage for extra flavor.

  3. Combine pasta and tomatoes: Add the cooked pasta to the pan with the tomatoes. Toss everything together, adding a little reserved pasta water if needed to help the sauce coat the pasta.

  4. Add feta cheese: Remove from heat and crumble the feta cheese over the pasta. Toss again until the feta melts slightly and combines with the tomatoes.

  5. Season: Season with salt and pepper to taste. Garnish with fresh basil leaves if desired.

  6. Serve: Serve warm and enjoy your creamy, tangy pasta with feta and cherry tomatoes!
