Chocolate Fudge Cupcakes

Chocolate Fudge Cupcakes sound delicious! Here’s a simple and tasty recipe to make them:

Ingredients:

For the Cupcakes:

  • 1 1/2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1/2 cup unsweetened cocoa powder

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 2 large eggs

  • 1/2 cup whole milk

  • 1/2 cup vegetable oil

  • 1 tsp vanilla extract

  • 1/2 cup boiling water (or hot coffee for a richer flavor)

For the Fudge Frosting:

  • 1/2 cup unsalted butter, softened

  • 2 cups powdered sugar

  • 1/4 cup unsweetened cocoa powder

  • 2 tbsp milk (adjust for consistency)

  • 1 tsp vanilla extract

  • Pinch of salt

Directions:

For the Cupcakes:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  2. Combine dry ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. Mix wet ingredients: In a separate bowl, whisk together the eggs, milk, oil, and vanilla extract.

  4. Combine wet and dry: Add the wet ingredients to the dry ingredients and mix until smooth.

  5. Add boiling water: Gradually add the boiling water (or hot coffee) to the batter, mixing until the batter becomes thin and smooth.

  6. Fill the cupcake liners: Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

  7. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.

  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

For the Fudge Frosting:

  1. Cream butter: In a medium bowl, beat the softened butter until smooth and creamy.

  2. Add dry ingredients: Gradually add the powdered sugar, cocoa powder, milk, and vanilla extract. Beat until smooth and fluffy.

  3. Adjust consistency: If the frosting is too thick, add a little more milk; if too thin, add more powdered sugar.

  4. Frost the cupcakes: Once the cupcakes are completely cooled, spread the fudge frosting generously on top.
