Fiery Cajun Shrimp Stuffed Jalapeños sound like a delicious and spicy appetizer! Here’s a recipe for you to try:

Ingredients:

  • 12 large jalapeño peppers

  • 1 lb shrimp (peeled and deveined)

  • 2 tbsp olive oil

  • 1 tsp Cajun seasoning (adjust to taste)

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika

  • 1/4 tsp onion powder

  • 1/4 tsp cayenne pepper (optional for extra heat)

  • 1/2 cup cream cheese (softened)

  • 1/2 cup shredded cheddar cheese (or a cheese of your choice)

  • 2 tbsp fresh cilantro (chopped)

  • Salt and pepper (to taste)

  • Lime wedges (for serving, optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare the Jalapeños:

    • Slice the jalapeños in half lengthwise and remove the seeds and membranes (wear gloves if you’re sensitive to heat). Set them aside.

  3. Cook the Shrimp:

    • Heat the olive oil in a large skillet over medium heat.

    • Add the shrimp to the skillet and season with Cajun seasoning, garlic powder, paprika, onion powder, cayenne (if using), salt, and pepper.

    • Cook the shrimp for about 2-3 minutes on each side, until pink and opaque. Remove from the heat and chop them into small pieces.

  4. Make the Filling:

    • In a medium bowl, mix the chopped shrimp with the cream cheese, shredded cheddar, and chopped cilantro. Stir until well combined.

  5. Stuff the Jalapeños:

    • Spoon the shrimp mixture into each jalapeño half, packing it in as much as you can.

  6. Bake:

    • Place the stuffed jalapeños on the prepared baking sheet and bake for 15-20 minutes or until the peppers are tender and the cheese is melted and bubbly.

  7. Serve:

    • Garnish with additional cilantro if desired, and serve with lime wedges for an extra burst of flavor!
