Creamy Garlic Parmesan Crusted Chicken over Roasted Broccoli Pasta

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup breadcrumbs (preferably panko)

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp dried Italian seasoning

  • Salt and pepper to taste

For the Creamy Garlic Parmesan Sauce:

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 3 cloves garlic, minced

  • 2 tbsp butter

  • 1 tbsp olive oil

  • Salt and pepper to taste

For the Roasted Broccoli Pasta:

  • 1 lb pasta (like penne or spaghetti)

  • 2 cups broccoli florets

  • 1 tbsp olive oil

  • Salt and pepper to taste

Instructions:

Roasted Broccoli:

  1. Preheat your oven to 400°F (200°C).

  2. Toss the broccoli florets with 1 tbsp olive oil, salt, and pepper.

  3. Spread the broccoli on a baking sheet and roast in the oven for 15-20 minutes, or until tender and slightly crispy on the edges. Remove from the oven and set aside.

Chicken:

  1. Preheat your oven to 375°F (190°C).

  2. In a shallow dish, mix the grated Parmesan cheese, breadcrumbs, minced garlic, Italian seasoning, salt, and pepper.

  3. Coat the chicken breasts in the breadcrumb mixture, pressing gently to ensure it sticks.

  4. Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 3-4 minutes per side until golden brown.

  5. Transfer the chicken to the oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F (75°C). Remove from the oven and let rest for a few minutes before slicing.

Creamy Garlic Parmesan Sauce:

  1. In the same skillet used for the chicken, add 2 tbsp butter and 1 tbsp olive oil over medium heat.

  2. Add the minced garlic and cook for 1-2 minutes until fragrant.

  3. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese and cook, stirring frequently, until the sauce thickens (about 5-7 minutes).

  4. Season with salt and pepper to taste.

Pasta:

  1. While the chicken is baking and the broccoli is roasting, cook the pasta according to package instructions.

  2. Drain the pasta, reserving a cup of pasta water.

Assembly:

  1. Toss the cooked pasta with the roasted broccoli.

  2. Pour the creamy garlic Parmesan sauce over the pasta and broccoli, tossing to coat.

  3. Slice the chicken and arrange it on top of the pasta.

  4. Garnish with extra Parmesan and fresh herbs (optional).
