Smoked BBQ Brisket Melts

Ingredients:

  • 2 cups smoked brisket (shredded or sliced thin)

  • 4 slices of sourdough bread (or your favorite bread)

  • 1 cup shredded sharp cheddar cheese

  • 1/2 cup mozzarella cheese (optional, for extra meltiness)

  • BBQ sauce (about 1/4 cup, your favorite kind)

  • Butter (for toasting the bread)

  • Pickles (optional, for extra tang)

  • Onion rings or caramelized onions (optional for added flavor)

Instructions:

  1. Prepare the Brisket: If you’re using leftover smoked brisket, shred or slice it into thin pieces. You can warm it up in a pan with some BBQ sauce for extra flavor.

  2. Butter the Bread: Spread butter on one side of each slice of bread. This will help the bread get crispy when toasted.

  3. Assemble the Sandwich:

    • On the non-buttered side of two slices of bread, spread some BBQ sauce.

    • Layer with the shredded or sliced brisket, and top with the cheese.

    • If you’re using pickles or caramelized onions, add them in between the cheese and brisket.

  4. Grill the Sandwich: Heat a skillet over medium heat. Place the sandwiches (buttered side down) in the skillet and grill until the bread is golden brown and the cheese is melted. This usually takes about 3-4 minutes per side.

  5. Serve: Once both sides are crispy and the cheese has melted, remove from the pan. Let them cool for a minute before slicing.

  6. Optional: You can also add a side of extra BBQ sauce for dipping!
