Ingredients:

For the Red Velvet Cake:

  • 1 ½ cups all-purpose flour

  • 1 cup sugar

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 2 tbsp cocoa powder

  • 1 cup buttermilk

  • 2 large eggs

  • ½ cup vegetable oil

  • 1 tsp vanilla extract

  • 2 tbsp red food coloring

  • 1 tsp white vinegar

For the Cheesecake Filling:

  • 2 (8 oz) packages cream cheese, softened

  • 1 cup heavy cream

  • 1 cup powdered sugar

  • 1 tsp vanilla extract

  • 2 tbsp sour cream

For the Strawberry Topping:

  • 1 lb fresh strawberries, sliced

  • ¼ cup sugar

  • 1 tbsp lemon juice

Directions:

  1. Make the Red Velvet Cake:

    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch cake pans.

    • In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.

    • In a separate bowl, mix the buttermilk, eggs, vegetable oil, vanilla extract, food coloring, and vinegar until combined.

    • Gradually add the wet ingredients to the dry ingredients and mix until smooth.

    • Divide the batter evenly between the prepared cake pans.

    • Bake for 25-30 minutes or until a toothpick comes out clean. Let the cakes cool completely.

  2. Make the Cheesecake Filling:

    • In a mixing bowl, beat the cream cheese until smooth.

    • Add the powdered sugar, heavy cream, vanilla extract, and sour cream. Continue mixing until the mixture is thick and creamy.

    • Once the cakes have cooled, spread a layer of the cheesecake filling on top of one cake.

  3. Assemble the Cake:

    • Place the second layer of red velvet cake on top of the cheesecake layer.

    • Spread more cheesecake filling on top, smoothing it out evenly.

  4. Make the Strawberry Topping:

    • In a bowl, toss the sliced strawberries with sugar and lemon juice. Let them sit for about 10-15 minutes to release their juices.

    • Pour the strawberries and syrup over the top of the cheesecake layer.

  5. Serve:

    • Slice and enjoy the creamy, fruity goodness of your Red Velvet Strawberry Cheesecake!
