Banana And Apple Oat Cookies

Here’s a simple recipe for Banana and Apple Oat Cookies that’s both delicious and healthy!

Ingredients:

  • 1 ripe banana, mashed
  • 1/2 cup applesauce (or 1 small apple, finely grated)
  • 1 cup rolled oats
  • 1/2 cup whole wheat flour (or any flour of your choice)
  • 1/4 cup raisins or any dried fruit (optional)
  • 1/4 cup chopped nuts (walnuts or almonds work great, optional)
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp baking powder (optional, for slightly puffier cookies)
  • 2 tbsp honey or maple syrup (optional, for sweetness)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mash the ripe banana until smooth. If you’re using a grated apple instead of applesauce, grate it finely and add it to the mashed banana.
  3. Add the applesauce (if using), vanilla extract, and honey/maple syrup (if using) to the banana mixture. Stir to combine.
  4. Stir in the rolled oats, whole wheat flour, cinnamon, salt, and baking powder. Mix until everything is well combined.
  5. Add any optional mix-ins like raisins, dried fruit, or nuts.
  6. Using a spoon, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 1 inch apart. Flatten each cookie slightly with the back of the spoon.
  7. Bake for about 12-15 minutes or until the cookies are golden brown on the edges.
  8. Cool on a wire rack before serving.
